The whole cluster grapes are directly pressed in a pneumatic press with a long and soft pressing, hence the coral/ light pink salmon color. Cremant Rose is made by the Champagne Methode. Vintage by Dom. Ste. Michelle from Columbia Valley, Washington. Luxe is a very delicate Blanc de Blancs sparkling wine crafted in the time-honored methode champenoise tradition. As in Champagne, only free run juice is used which results in extremely delicate flavors. For the 1999 vintage, juice was feremted in French oak after inoculation and aged for 12 months to build layers of flavor and creaminess. The second fermentation in the bottle lasted 20 weeks and then the wine was aged for 3.5 years for added complexity. Even in the glass this sparkling wine will tempt you - a beautiful very pale yellow sparkler with loads of tiny bubbles promises good things to come. Enticing aromas of grapefruit, lemon and pear fill the nose. On the palate tropical pineapple notes are complimented with subtle hints of ginger and a creamy soft mouthfeel. This Carneros-designated Blanc de Noirs has a delicate copper color and fruit aromas of strawberry and cherry overlaid with warm cocoa from Pinot Noir. Its softer cousin Pinot Meunier contributes a warm spice, almost clove character with overtones of orange peel and freshly baked bread. To enhance this Cuvee 391, wines from the 1991 vintage were blended with selected 'vin de reserve' held back from previous years. 1991 was characterized by cool conditions during maturation and harvest, critical to flavor development for sparkling wine. Three years of aging lends this wine breadth and body, while retaining its freshness and fruitiness. The balance is stylishly crisp, reflecting the Carneros region's full ripe flavors. Non-Vintage by Scharffenberger from North Coast, California. Scharffenberger Brut is made by the traditional methode champenoise process - whereby the wines are individually bottle-fermented before being riddled and disgorged. The wine is approximately two-thirds Pinot Noir and one-third Chardonnay and undergoes 100% malolactic fermentation. Scharffenberger Brut is made from its own 120-acre vineyards in the Anderson Valley. In addition, Scharffenberger Cellars has long-term contracts with select vineyards in the greater Mendocino County. This type of vineyard selection allows us to choose from the best vineyards in the area which enables us to produce our trademark cuvee. The wine is two-thirds Pinot Noir which produces a red fruit (cherry and plum) forward nose combined with one-third Chardonnay which adds the tropical expression of litchi nut and mango. The 100% malolactic fermentation adds a vanilla cream character producing a round and full-bodied wine. After approximately two years on the yeast lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Finally, after several months on the cork the wine develops caramel and hazel complexors. Fresh aromas of butterscotch and croissant with yeasty, bakery notes. Pinot Noir and Pinot Meunier are picked by hand and Chardonnay at night to retain freshness and acidity. Specially selected Pinot Noir or Malbec is added to 'tache' the wine after disgorgement, resulting in a zesty sparkling wine of rosy hue and a refined freshness.
